Bean salad

When the weather is hot, nothing beats a fresh salad.
Today it was baby spinach, some canned butter beans, two oranges that were a bit sorry-looking on the outside (but still lovely on the inside) and some Spanish onion. I had bought some dressing yesterday that I was quite keen to try out. It’s a rose petal vinaigrette, and it had a lovely light fragrance.

I just love how you can have a huge bowl of salad and feel so satisfied.

I’m soaking some mung beans for tomorrow’s lunch right now. not sure what I’ll make with those…
