simple tofu burger

I could eat everything on bread.
There’s just something immensely pleasant about biting into a crusty bread roll, or even a soft bun filled with the good stuff.

This is the tofu scramble bagel I had for dinner on Saturday night, and while it doesn’t look too exciting, it was delicious.

All I did was crumble some firm tofu that had been frozen and squeezed, then stirred in a splash of lemon juice, a spoonful of seeded mustard and some pepper for a tasty filling. I added sun-dried tomatoes and capers for an extra kick and spread delicious ripe avocado over my crunchy, crunchy bagel.

Simple heaven.
