simple tofu burger

I could eat everything on bread.
There’s just something immensely pleasant about biting into a crusty bread roll, or even a soft bun filled with the good stuff.

This is the tofu scramble bagel I had for dinner on Saturday night, and while it doesn’t look too exciting, it was delicious.

All I did was crumble some firm tofu that had been frozen and squeezed, then stirred in a splash of lemon juice, a spoonful of seeded mustard and some pepper for a tasty filling. I added sun-dried tomatoes and capers for an extra kick and spread delicious ripe avocado over my crunchy, crunchy bagel.

Simple heaven.

Hi Kiki, and thanks for the link! It’s great to see another veg*n blog in the area, I’m looking forward to trading recipe and restaurant recommendations.
